Potato Bread Stuffing

The star of the Thanksgiving table…

This recipe holds a warm place in my heart.  The first time I ate this was at my then boyfriend's house (now my husband of 46 yrs) for my first Thanksgiving dinner with his family.  This recipe is delicious and the epitome of comfort.  Over the years, I have altered it.  So, I will give you my version of Mrs. Fitz's stuffing recipe. 

Potato Bread Stuffing Ingredients
1 loaf of Potato Bread (I like Martin's or Stroehmann's)

1 large egg

1 to 1 ½ cups of low sodium chicken stock (I use Kitchen Basics)

12-16 ounces of butter (more butter, richer flavor)

2 celery sticks diced into small pieces

1 small onion diced into small pieces

½ teaspoon of poultry seasoning

½ teaspoon of marjoram

½ teaspoon of thyme (If you are using fresh marjoram and thyme, I would probably add a teaspoon of each of those. Mince them finely.)

Salt and pepper to taste

 

Directions

Using your kitchen shears, cut the bread into cubes (half to an inch is fine) and place into a large bowl.  Set aside

Sauté celery and onion in the melted butter until soft.  Do not let the butter evaporate.

Sprinkle with salt, pepper, and other spices. Add the egg, celery, onion, and butter. Pour chicken stock over the mixture until moist. Do not add all of it if you don't need it—you want it wet but not soggy. Mix well and place in a casserole dish.  Let is sit for about a ½ hour or so to let the flavors mesh.

Cover with foil and bake at 350 degrees for 30 minutes. Remove foil and bake an additional 15 minutes until top is golden brown.

The great thing about this stuffing is that it is just as tasty the next day or cold right from the fridge.

If you are having a crowd, you can easily double or triple the recipe—it will be a big hit!
Obviously, this recipe is not low in calories or carbs, but everyone deserves a treat, especially on Thanksgiving.

 

Alternatives

  • Try adding sautéed mushrooms to the recipe

  • You can also use a different type of bread to make it your own

  • I also make this recipe   and stuff chicken breasts with it.  It's amazing!
